When I first cut out certain foods and chemicals from my diet I never really imaged being able to enjoy some of life's most tastiest and comforting meals anymore. The more I learned about the variety of wholesome food products that were able to substitute generic ingredients in recipes the more deliciously classic meals I was able to reintroduce into my healthy lifestyle without feeling guilty or sick.


Chocolate Coconut Pancakes
Vegan & Gluten Free 
-1  cup coconut flour
-1/4 cup maple syrup
-1 tablespoon coconut oil melted
-1 medium sweet potato peeled, cooked, and mashed
-1/3 cup cocoa powder
Mix together wet ingredients (including sweet potato)
and then add the dry ingredients
-add another tablespoon of coconut oil to pan for frying
-pour desired amount of batter to the pan
-flip when bubbles start to form on top 







I have made pancakes a few times now, once as plant based and once made with egg. Both came out delicious and nutritious free from gluten, dairy, and refined sugar or oil. I used coconut flour and a cooked sweet potato in the plant based version which made the pancakes moist and sweet while the version with eggs made them fluffy and cake-like.


Plain Jane Pancakes
Vegetarian & Gluten Free & Dairy Free
-2 eggs
-1 mashed banana
-1 teaspoon of vanilla extract
-sea salt
-cinnamon
Mix ingredients all together
-add a tablespoon of coconut oil to pan for frying
-pour desired amount of batter to the pan
-flip when bubbles start to form on top
