Fried Plantains
I first had fried plantains when I was staying with a host family in Costa Rica. They were sometimes for dessert and sometimes as a side for dinner. The taste and texture all depend on the ripeness of the fruit; green will be starchy and hard, yellow will be sweet and soft. You can get them fairly cheap at most grocery stores and food markets.
A super easy and comforting snack, side dish, or dessert!
~ slice thinly
~ melt a tablespoon of coconut oil in pan on medium heat
~ add plantains and cook for about 10-15 mins
~add cinnamon, maple syrup, and sea salt - continue mixing and frying for another 3-5 mins.
Plantains help fight against colds, skin irritations, constipation, and asthma. They are also filled with vitamins and minerals! Eat up!
